300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

For the Premix (produces 850ml, to serve 10)

For the Premix: Pour the specified liquids into a large bottle, let it rest for one hour, then strain best through a fine cloth, so it's fully clarified.

When ready to serve: Add 85ml of the cocktail base into your stirring glass packed with ice, and agitate gently for a minute to chill. Filter into an frosted cocktail glass or equivalent, decorate with a few cranberries and finish with a light spray of mandarin oil over the top.
